Title: Onion Cheese Puffs

1/2smYellow onion
1/2cMayonnaise
3tbFreshly grated parmigiano-reggiano
2tbFinely chopped fresh parsley
  Salt and freshly ground pepper, to taste
8slWhite bread

Preheat oven to 350 degrees.

Peel and finely chop small yellow onion and mix with mayonnaise, freshly grated Parmigiano-Reggiano, and finely chopped fresh parsley in a medium bowl. Season with salt and freshly ground pepper.

Remove crusts from 8 slices of white bread. Using a 1-inch round cookie cutter, cut bread into 32 rounds. Place on a cookie sheet and bake, without turning, until golden, 10-15 minutes.

Preheat broiler. Spread about 1 teaspoon onion mixture onto each round, then sprinkle with more Parmigiano-Reggiano and brown under broiler for 1 to 2 minutes. Serve immediately.
